BOKUJO RAMEN, RAPID CITY Food Network star Justin Warner and Brooke Sweeten infuse their Japanese-style ramen dishes with a South Dakota twist, using locally sourced ingredients to create only-in-SD flavors such as broth made with simmered bison bones from Wild Idea Buffalo Co. and mushroom miso ramen piled with fungi from Black Hills Mushrooms. LALIBELA RESTAURANT, SIOUX FALLS For two decades, Mulugeta and Marta Endayehu have been serving up Ethiopian delicacies from lamb and beef stews to vegetarian dishes of spiced lentils and chopped collard greens, which diners scoop up with spongy, tangy injera bread. SKOGEN KITCHEN, CUSTER Artful creations, experimental flavors and abundant textures weave their way through the inventive menu at this Scandinavian-influenced restaurant owned by chef Joseph Raney. Here, you’ll find unexpected meats such as rabbit and veal cheeks, as well as gourmet add-ons such as truffle and foie gras. RECIPE South Dakota Chislic with Horseradish Dippin’ Sauce Submitted by Chef Dan Brown from Mitchell, South Dakota A South Dakota tradition brought to the southeast corner of the state by German Russian immigrants during the 1800s, chislic is a dish of juicy, seasoned cubes of meat that are typically eaten with toothpicks and paired with crackers or fries. Make this local specialty for yourself. Ingredients Mutton (traditional), venison or beef cut into half-inch cubes Dippin’ Sauce Ingredients 1 cup sour cream 1/4 cup horseradish 2 tablespoons mayonnaise Salt and pepper to taste Heat oil in a pan to 350° and cook meat for 1 to 3 minutes, depending on personal preference. (South Dakotans like theirs rare.) Dump meat into a bowl lined with paper towels to soak up excess oil, and immediately sprinkle with garlic salt. Toss to coat evenly. For the sauce, combine all ingredients in a bowl and whisk well to combine. Grab a toothpick, some club crackers and a cold beer. Enjoy.
