Shrimp Po-boy ©Lauri Patterson The po-boy is the sandwich of New Orleans. In 1929, restaurateurs Bennie and Clovis Martin gave free sandwiches to striking streetcar workers as a sign of solidarity, often saying “here comes another poor boy.” These days, you order your own po-boy “dressed” with lettuce, tomato, pickles and mayo, served up with a variety of meats and cheeses.
