The taste of Colorado is fresh! With so many farms and ranches, makers of food and drinks have an abundant choice of locally grown ingredients.

Elevated Dining Scene
In addition to the more than 50 MICHELIN-rated restaurants across Denver, Vail, Boulder, Aspen, Beaver Creek and Snowmass — spanning the Star, Green Star, Bib Gourmand and Recommended categories — Colorado boasts a vibrant culinary scene led by award-winning chefs. Many of these restaurants are dedicated to showcasing local produce and products, with some even growing their own ingredients through private gardens and farms to offer the finest heirloom and artisan produce.
Signature Produce
Colorado is known for everything from sweet and juicy Palisade peaches, Paonia cherries and Olathe sweet corn on the western side of the state to Rocky Ford cantaloupes along the eastern plains. Pueblo mirasol chiles bring bold heat from southern Colorado, while farms across the state produce sugar beets, beans and more. Look for dishes with these ingredients on restaurant menus as you travel.
U-Picks & Farm Dinners
When harvest season nears in autumn (typically September and October), Colorado’s farms swing open their gates for fun in the fields. Many are eager to teach visitors about agriculture and you can pick — and taste! — your produce right from the source for a farm-fresh meal, from apples and peaches to pumpkins, squash, corn and herbs.
Some growers even host intimate events in the fields to showcase what they’ve raised. Others offer lodging, where visitors can stay on the farm, help out if they wish and enjoy a fresh, tasty breakfast.
Liquid Arts
Colorado has a remarkable collection of more than 400 craft breweries, 140 wineries and more than 100 distilleries. Thanks to the state's pure Rocky Mountain water, these craft beverages have distinct quality and character, best discovered through tours and tastings.
