my TENNESSEE Just a mile from Brownsville’s Main Street, the fragrant aromas of meat smoking over an open fire will lure you into an unassuming building, where you’ll find HELEN TURNER, owner of Helen’s Bar-B-Q, who is one of the few female pit masters in the country and ranked fourth in the South by “Southern Living.” “My husband comes in and starts the fire at five in the morning. I say I open up at 10 a.m. but I’m here before … I come in and put on the shoulders and ribs and all that. The person that’s hungry, whether they see that ‘open’ sign or not, if they see my truck out there, they come in. They’ll come in at 8 a.m. for a barbecue or bologna sandwich—they’ll eat it for breakfast! Pulled pork, baked beans, potato salad, cole slaw— with the bun on top: for me, that’s the perfect barbecue plate. The potato salad and cole slaw are my own recipes. I peel my own potatoes; shred my own cabbage. I add a little extra stuff in my baked beans. From time to time, I still make banana pudding.” Visit tnvacation.com/barbecue.
